Zucchini & Herb Pancakes Recipe

Ingredients:

  • 2 medium zucchinis, grated
  • 2 eggs
  • 1 cup flour (125g)
  • 1/2 cup milk (120ml)
  • 1/4 cup water (60ml)
  • 2 tablespoons chopped parsley (or cilantro)
  • 2 tablespoons chopped green onion (optional)
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon baking powder (optional, for fluffiness)
  • Oil or butter for cooking

Instructions:Prepare the zucchiniGrate the zucchini and squeeze out excess water using a clean cloth or your hands.Make the batterIn a large bowl, whisk together eggs, milk, and water.Add flour, salt, pepper, and baking powder. Mix until smooth.Stir in grated zucchini, chopped parsley, and green onions.Cook the pancakesHeat a non-stick skillet or pan with a small amount of oil or butter over medium heat.Pour a ladle of batter into the pan and spread it thin like a crepe.Cook for about 2 minutes on each side or until golden brown.ServeStack them on a plate and serve hot.
